We started detailed discussions this week with Estelle Dessup, our wine maker. Making a good Cabernet Franc varietal wine in the Premières Côtes de Bordeaux is a challenge. The garage at Hourcat Est needs to be converted into the “winery” and equipment installed. Harvesting will be done by hand and the wine matured in oak.
